Butternut Squash


Ingredients:

  • 1 butternut squash, peeled and cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup pure maple syrup
  • 1 Tablespoon Rosemary (fresh is preferred)
  • 2 Tablespoons of brown sugar (light or dark)
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350
  2. Combine the olive oil and maple syrup into a mixing bowl, add in butternut squash and mix well
  3. Place on roasting pan, and add salt and pepper to taste
  4. Place in oven and roast squash until it starts to brown and caramelize, make sure to mix squash every 15-20 minutes
  5. Once the squash browns remove squash from oven and sprinkle with brown sugar and place back into the oven for 5-10 more minutes
  6. Once finished, top with fresh rosemary and serve.
