Ingredients:
- 5 carrots
- 6 celery stalks
- 1 large onion
- 2 tablespoons of ginger
- 1 tablespoon of rosemary
- 1 tablespoon of thyme
- 10 cloves of garlic
- 1.5 pounds of chicken breast
- 1 cup of ditalini pasta
- 2 lemons
- 12 cups of chicken stock
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions:
- Add carrots, celery, onion, ginger, rosemary, thyme, garlic, and olive oil to large pot. Cook until soft (3-5 min)
- Add all chicken stock and bring to boil
- Add chicken
- Once the chicken is cooked, pull it out and shred. While shredding add the noodles to cook. After shredding add chicken back in.
- When noodles are done, add fresh squeezed lemons and serve
