David’s Chicken Soup

Serves: 10

Ingredients:

  • 5 carrots
  • 6 celery stalks
  • 1 large onion
  • 2 tablespoons of ginger
  • 1 tablespoon of rosemary
  • 1 tablespoon of thyme
  • 10 cloves of garlic
  • 1.5 pounds of chicken breast
  • 1 cup of ditalini pasta
  • 2 lemons
  • 12 cups of chicken stock
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions:

  1. Add carrots, celery, onion, ginger, rosemary, thyme, garlic, and olive oil to large pot. Cook until soft (3-5 min)
  2. Add all chicken stock and bring to boil
  3. Add chicken
  4. Once the chicken is cooked, pull it out and shred. While shredding add the noodles to cook. After shredding add chicken back in.
  5. When noodles are done, add fresh squeezed lemons and serve
